A little overwhelmed . . . so I baked cookies!

My first post, I should have something quotable or earth shattering to say, but I am a little overwhelmed, so I baked cookies!  Everything is better with a fresh baked cookie! Today I used a recipe that I found on Pinterest.  The recipe is from www.theSundayBaker.net. It is the second time we have made the recipe.  We found that they are ‘cakier’ than we normally make and not the best we have ever had when warm but, they were tastier days after they were made than any other recipe I have found. So I tried them again.

Chocolate chip cookies with Rolos, Skor bits, cherries and Lindt chocolate

All four versions!

 Pudding Cookies

Ingredients:

4 1/2 c. all-purpose flour

2 tsp. baking soda

1-1/2 c butter (3 sticks) softened

1-1/2 c. brown sugar, packed

1/2 c. white sugar

2 (3.4 oz.) pkgs. instant vanilla pudding

4 eggs, room temp

2 tsp. vanilla extract

4 c. of add-ins

(like chocolate/butterscotch/peanut butter/white chocolate chips, candy bars, m&m’s, nuts, etc.)

Preheat oven to 350 degrees. Stir together flour and baking soda in separate bowl and set aside; in a large bowl, cream butter, brown and white sugar. Beat in pudding mix until well blended. Stir in the eggs and vanilla. When smooth, slowly add in the flour mixture. This can take a little while, but make sure it’s well incorporated into mix.  Finally, add the “fillers”.

Last time we made chocolate chip/butterscotch chip, chocolate chip/Skor bits (Heath bar bits for any non-Canadians out there) and mini Rolos.  The Rolos made a mess and stuck to the pan. This time I made the Rolos, but some I completely encased in dough and others I made somewhat of a nest. I also tried Lindt Dark chocolate/dried cherries and plain chocolate chip. They seemed to look a little yummier when I rolled the balls with my hands rather than using a scoop. They were all delicious.  I think I would really like peanut butter cups and chocolate chips, but my son has a peanut allergy.  Someone try it and tell me how they are. I would love to know.

Well, that wasn’t so painful and we got cookies! Almost burned a batch writing the blog. Note to self, wait until the cookies are done until you sit down to write the post!
