Once or twice a year I by a flat of figs. I like them them raw, very ripe and a little mushy. Sweet and yummy! We were having some friends for dinner and I remembered trying a fig salsa recipe a few years ago. So, I went to www.foodgawker.com and searched fig recipes. I found a recipe at http://gavanmurphy.com/fig-and-avocado-salsa/. My thanks to Gavan, not just for the keeper recipe, but also for the wonderful photography of the salsa, check it out! We did snap a few pics of our own, but Gavan captures the whole process. Here goes, make it and be prepared for dancing tastebuds!
Figtastic Salsa
3 cups diced fresh figs ( I used green ones)
juice of one lime
3 medium firm ripe avocados, diced (I used 2 large)
3 fresh jalapenos, small diced, seeds and ribs removed
2-3 medium, vine-ripened tomatoes, diced, seeds removed
4 teaspoons honey
1 teaspoon fine sea salt
1 teaspoon ground coriander
1 teaspoon ground cumin
2 small cloves of garlic, minced
Mix it all together and let sit in the fridge to let flavours mix for a few hours or even over night. Serve with tortilla chips or crackers. Enjoy!
