It isn’t Thanksgiving without Pumpkin Pie. It is one of my daughter’s favourite desserts. She learned early to make it herself. She whips up her own batch of pastry too…that’s my girl!
Not sure if you noticed the Pi plate, not a typo, have a closer look. It is her favourite pie plate…that’s my girl!
Here’s the recipe:
Pumpkin Pie
makes 2 pies
1 790mL can of pure pumpkin
1 370mL can of evaporated milk
4 eggs
2 cups brown sugar
2 tsp cinnamon
2 tsp pumpkin pie spice
1/2 tsp salt
2 pie plates, filled with pastry
Mix ingredients in large bowl. Bake at 425 degrees or 15 minutes. Reduce heat to 350 degrees and bake another 30-35 minutes until knife inserted in centre comes out clean.

We hosted a tasty turkey dinner tonight for 12. Turkey, stuffing, mashed potatoes and gravy, green beans with roasted almonds, sweet potatoes, corn, rolls with buttertarts and pumpkin pie for dessert.
