Healthy Fare

I am trying very hard to eat healthier this summer and exercise more regularly..other than walking my ‘sometimes I don’t want to walk’ dog to the park. Fish, we should eat more fish. Kale, it’s a superfood! Here is what we had tonight.  It is adapted from a Weight Watcher recipe called Baked Trout with Tomato.

Trout with Tomato and Kale

2 cups shredded kale( I am sure spinach would work too!)

1/4 cup parsley or chervil

1.25 lbs trout (ours came in two fillets)

1/4 cup V8 or tomato juice

4 tsp worcestershire sauce

1/2 tsp pepper

1/2 tsp salt

4 tsp butter

Heat up BBQ (or preheat oven to 425 degrees). Mix, tomato juice, worcestershire sauce and salt and pepper in small bowl.  Lay out heavy duty foil, or doubled regular foil.  Layer kale, trout, tomatoes and sauce on foil.  Kale would be best on the bottom, but our fish had skin, so we put it on top! Put on the pats of butter. Seal up the foil.

Cook for about 10-15 minutes on the BBQ, check to make sure fish is cooked, just until opaque in centre. Or bake on baking sheets in oven. Serve with lemon if desired.

Healthy Fare

I made a quick veggie stir fry of onions, garlic, zucchini and peppers. Cooked up some rice. Yum!  Quite pleased with myself at our uber-healthy meal. Then Alex says 6 magic words…’Can I make Chocolate Chip Cookies?’. Absolutely…so much for healthy living!
